This Asian bowl are made with all vegan ingredients - Sweet and sour tofu, steamed spinach and mukimame (small edamame) and steamed rice.
SWEET AND SOUR TOFU
Ingredients:
1 pkg. Organic Tofu, drained and cubed
- Drain the tofu, slice in cube and fry in a medium high heat
Option: Marinate the tofu for few hours or overnight prior to frying
(1/4 c. soy sauce 1 TB sweetener like agave, maple syrup or sugar, 1 tsp. minced garlic, 1 TB lemon juice)
To make Sweet and Sour Sauce:
1 c. Pineapple Juice
1/3 c. Lemon Juice
1/2 c. Light Brown Sugar
1 tsp. Garlic, minced
1 small Red Bell Pepper, minced
1/4 c. Ketchup
3 TB Soy Sauce
1 1/2 TB Cornstarch, dissolved in 3 TB water
1. Place all of the ingredients, except cornstarch mixture in a small saucepan and bring it to a boil.
2. Stir in the cornstarch mixture and simmer for 1 minute until thickened. Stir it constantly.
3. Serve it warm, add it to your favorite dish or let it cool completely in an airtight container.
