VEGAN BAKED SAMOSAS

Samosas is one of the Indian cuisine that I fell in love with. It reminds me of our Asian spring rolls but in another version.These are filled mostly with potatoes, peas and roasted cashews and wrapped in homemade pastry. To make these vegan baked samosas, start by preparing the pastry dough, almost the same way as making a pie crust. Mix all the pastry ingredients, knead and let it rest while preparing the filling, then bake. The idea of being baked compared to deep fried is far beyond healthier. I tried to simplify the process to make it easier, so don't feel overwhelmed with all the ingredients and instructions. It is definitely worth trying and you will not get disappointed.



VEGAN BAKED SAMOSAS


INGREDIENTS


For pastry dough


2 c. Whole Wheat Pastry Flour

2 tsp. Baking Powder

1/2 tsp. Salt

1/2 c. Water, may need to add 1-2 TB more

1/4 c. Light Olive Oil


- In a bowl, add flour, baking powder and salt

- Add the water and oil to form a dough

- Turn the dough on a lightly floured surface and knead for 5-10 minutes

- Place the dough in a lightly oiled bowl and cover with a kitchen towel and let it sit for 30-40 minutes while preparing the filling


For filling


3 c. Red Potatoes, small diced

1/2 c. Green Peas, fresh cooked or frozen

1/4 c. Roasted Cashews, coarsely chopped

1/8 c. Pimientos or red bell pepper diced small

1 small onion, finely chopped

3 cloves garlic, minced

1 tsp. Curry Powder

1/2 tsp. Turmeric Powder

1 TB Nutritional Yeast

1-1 1/2 tsp Salt

1 tsp Onion Powder

1/2 tsp. Garlic Powder

1/4 c. Fresh Cilantro, finely chopped


- Place the potatoes in a pot and cover with water. Set the heat on high and bring it to a boil. As soon as it starts boiling, turn the heat down to medium high and allow the potatoes to cook until it becomes tender, roughly about 10-15 minutes. Drain and set aside.


- Place a skillet in a medium high heat, add the oil and sauté the onion and bell pepper until the onions becomes translucent. Add the garlic and all the seasonings and stir until the garlic turns lightly brown. Add the potatoes, peas and cashews and sauté for another 1-2 minutes or until they are fully coated with spices and seasonings.Remove the skillet from heat and adjust the taste.


To wrap and bake


- Preheat the oven to 400° and line the baking sheet with parchment paper. - Lightly flour the work surface and have a bowl of water. - Scoop about 3 tablespoon full of dough and roll it into a ball. - Place the dough onto your work surface and roll it into a circle, about 1/8 inch thick using a rolling pin. - Place about 2 tablespoons of filling into the center of the dough and add some cilantro. - Fold the dough into three parts towards the center, to form a triangle shape. Pinch the dough edges together with wet fingers. - Place the samosas on the baking sheet. - Spray both sides of the samosas with oil. - Bake for 25 minutes or until samosas turned lightly brown. - Serve warm .
