ORANGE BLUEBERRY MUFFINS
Yield: 12 Muffins
Ingredients
2 c. Whole Wheat Pastry Flour
1 1/2 TB Baking Powder
1/2 tsp Salt
1 c. Date Sugar
1/2 c. Non-dairy Milk
1/2 c. Orange Juice
1 TB Lemon Juice
1 1/2 c. Fresh or frozen blueberries
Instruction
- Preheat the oven to 350 degrees. Use muffin cups or lightly grease the muffin pan cups.
- Combine and mix all the dry ingredients in bowl#1
- Combine and mix all the liquid ingredients in bowl#2 then add the flour mixture from the bowl#1. Mix well then fold in the blueberries using a spatula.
- Fill the muffin cups about 2/3 full and bake for 20 minutes or until the inserted toothpick comes out clean.
- Remove from the oven and let it cool in a wire rack or serve warm.
