Grilled eggplant is one of my favorite and instant dish to go. It is incredibly easy to prepare and it goes with just about anything and you can make it ahead of time too. It is also perfect for summer barbecue time grilling with bell peppers, onions, zucchini etc. Have you ever tried grilled eggplant burger yet? If not, you should, because it is definitely mouth watering. In Asia, we traditionally eat them with rice and chopped tomatoes, onions and cucumbers on the side if it is grilled, but there's a lot of options out there to serve it with.
GRILLED EGGPLANT with garlic sauce
Ingredients:
2 medium size eggplants
1/2 c. Olive oil, to brush the eggplant
1 tsp Smoked paprika
1 tsp Salt
For dipping sauce:
1/3 c. Soy sauce
1 TB Fresh lemon juice
2-3 cloves garlic, minced and pounded
1 tsp Agave or sugar
* Fell free to add some herbs like parsley or basil
Instructions:
- Cut your eggplant about 1/8 an inch in rounds or lengthwise or whatever shape you have in mind.
- Combine and stir the oil, paprika and salt. Use it to brush the eggplant before putting on the grill or while it's on the grill. You will know when eggplant is ready when it becomes soft and quite a bit soggy but not too soggy on each side.
- Serve with garlic dipping sauce or make a burger instead.
