This recipe is a bomb! I made a whole batch and was gone in no time. Young kids and grown ups just loved them. It's so easy to make and very appetizing!
Ingredients
Mashed Potatoes
3 medium potatoes, peeled and quartered
1/2-3/4 c. Non-dairy milk
2 TB Nutritional Yeast
Salt to taste
Patties
2 c. Mashed Potatoes
1 TB chives or parsley, minced
1 tsp onion powder
1 tsp garlic powder
1/4 c. Unbleached Flour or any preferred flour
Salt to taste
Instructions
Mashed Potatoes
Place the potatoes in a large pot and add water just enough to cover the potatoes . Bring to a boil over medium heat, cover and cook for 15-20 minutes. Insert a fork to test if it is cooked. Once they become tender, drain the potatoes and let it set for 2-3 minutes.
Using a potato masher or a hand mixer, mash the potatoes until they become fluffy and smooth. Add unsweetened almond milk from 1/2 cup, then add gradually if it needed more, add nutritional yeast, salt, and stir until it is well combine. Add more milk if they need thinning. Taste and adjust the seasonings.
Patties
Mix all of the ingredients in a large bowl. This should make about 8 medium patties or about 15 small thin patties.
Place a skillet on a low medium heat, then add a generous amount of oil for frying.
Scoop about a tablespoon full of mashed potato or use a small scooper and drop the mixture directly to the skillet. Fry in a low medium heat for about 5-7 minutes each side, until they turned golden brown.
Serve hot with your favorite dipping sauce.
