GRILLED VEGETABLES
Ingredients
2 large eggplants, slices
1 medium zucchini, slices
1 small red bell pepper, wedges
1 small yellow bell pepper, wedges
Instructions
- Wash and clean all the vegetables
- Slice the eggplant and zucchini about an 1/8 inch size and slice bell peppers in wedges
- Marinade with your own Italian dressing version but I will add my own version in this recipe. Let it set for 30-45 minutes.
- Grill in the grilling pan or in an outside grill
- Serve with salad or any of your side dish preference
