Vegan Fried Cabbage - Southern/Asian Style

My husband's family grew up in Southern part of United States. Growing up, they are so accustomed in eating fried foods and one of them is fried cabbage with bacon. Although he he grew up in the North, he adopted the taste of some of his mom's Southern dishes and one of his favorite is fried cabbage. As an Asian wife, I have to twist it for Southern and Asian taste and at the same time is to veganize it!






Vegan Fried Cabbage - Southern & Asian Style


Ingredients


Half medium size cabbage, chopped

3-4 cloves garlic, minced

1 medium onion, chopped

1/2 c. chopped tomatoes

1 TB fresh parsley, minced or green onions

1/2 c. extra-firm tofu, slices

1/4 tsp. Garlic Powder

1/4 tsp. Onion Powder

Salt to taste

Oil for frying


Instructions

  • Set the stove in a medium heat, add oil in a pan, then fry the tofu until golden brown then set it aside.

  • Sauté the garlic, onion and tomatoes, then add the fried tofu.

  • Add the cabbage, stir for about 2-3 minutes, then add the seasonings.

  • Garnish with fresh parsley or green onions.
